Brocamole with stems

The Brocamole, or broccoli fortified guacamole, is a hybrid dip made in heaven. Served with the raw stems of the broccoli, this zero-waste dip takes the avocado crowd pleaser and elevates it to new heights. Serve at a party, or on a piece of toast for breakfast.

Ingredients:

  • 1 large broccoli

  • 1 large avocado

  • 1 brown onion

  • 4 cloves of garlic

  • 1-2 lemons

  • 1/2 bunch of mint

  • 50ml olive oil

  • Salt

  • pepper

  • water

Method:

  • Finely slice onion and garlic.

  • Heat a tick-based pan with a small amount of oil on medium heat.

  • Gently sweat down the onion and garlic with a couple of pinches of salt, until they become soft and translucent.

  • Thinly cut or slice the head of the broccoli with a sharp knife, so it becomes very fine.

  • Add to the pan, combined and keep stirring for 1 minute.

  • Pour in 1/4 cup of water and place a lid on the pan, so the broccoli gently steams.

  • When the broccoli becomes tender, take the lid off and set aside until it becomes cool, but not cold.

  • Meanwhile, blitz the avocado in a food processor with a splash of oil and lemon juice and salt to taste.

  • When the broccoli has cooled place with the mint in a food processor and blend until smooth, slowly adding the rest of the oil, until emulsified.

  • Pour the mix in a bowl and refrigerate.

  • When the mix is entirely cool combine with the avocado.

  • Season to taste.
